Buckeyes’ and Yeti balls for the holidays.

Yippee!! I am pretty much done with my shopping. After all of my running around today and attending a very nice Christmas open house, I was still able to finish these desserts today. In the south we just love Buckeyes for the holidays. If you are not sure what Buckeyes are I will explain. Buckeyes’ are chocolate peanut butter balls that resemble the buckeye nut. Reese’s’ have nothing on a buckeye!

This recipe comes from one of my Southern Living cook books. You can find the recipe by going to their link on my page or it is also listed below for you. These are very simple to make and are great for gifts during the holidays.

You are probably wondering about the Yetis’. These would be the darlin’  little brain child of my surfer. While I was in the middle of making my Buckeyes’, he came along and stole one, then he made the suggestion that the peanut butter balls would taste good with coconut. So I tried it and he loves them. Of course they needed a name. Since they are white, scruffy looking and he has always talked of the Yeti legends with the monkeys’…Yeti balls are what I came up with. Come on now, it sounds a heck of a lot cuter than Sasquatchs’.

Buckeyes’

  • 1  (16-ounce) jar creamy peanut butter
  • 1  cup  butter or margarine, softened
  • 1 1/2  (16-ounce) packages powdered sugar
  • 2  cups  (12 ounces) semisweet chocolate morsels
  • 2  tablespoons  shortening

Place the butter and peanut butter in a food processor or mixing bowl.

Beat peanut butter and butter at medium speed with an electric mixer or in a food processor until blended.

Gradually add powdered sugar, beating until blended. I added 3 cups first, then divided the left over sugar and added half at a time.

Second half of divided sugar.

Shape into 1-inch balls

Chill for 10 minutes or until firm.

Combine chocolate and shortening in a 2-quart glass bowl or double broiler. Heat the water until boiling then reduce the heat to low. Blend the chocolate and shortening until melted, stirring periodically.

Dip each ball in the chocolate mixture until partially coated.

To keep the chocolates from having a “skirt” of chocolate you can do one of two things…

Use a toothpick to remove the excess chocolate from around the candy once it is on the wax paper.

Or you can scrape the excess chocolate from the bottom before you place the candy on the wax paper.

Store in an airtight container.

You can also wrap them up in a lovely jar and give them to your friends for the holidays.

Yeti Balls

Use the same recipe for the buckeyes only roll them in coconut.

Stuffed mushrooms were a hit!!! I also made roasted tomatoes served with Goat cheese- I will email that recipe to you. You will love it!!
